I ordered a flowkooler water pump, stainless divider plate and stainless tubes and I am starting to tear the car down to do the swap. I also got a 180 thermostat with the felpro blue gasket to replace at the same time, as it appears that there is a 160 in the car currently. I read somewhere that the gaskets should go on dry. Is this correct? There appears to be silicone used on my thermostat housing and water pump that are currently in the car

I use RTV on the removable side of most all gaskets. ie, thermostat neck, Oil Pan, Timing cover, valve covers. Then I lightly grease or oil the other side. That way, the gasket stays with the removable piece, and is easier to remove down the road. If sealing surfaces are good and not warped, RTV on both sides is not needed and will just cause ripping of the gasket when you have to remove it and then scraping it off the block side.
